I found a fantastic vegan cookbook called Eat, Drink and Be Vegan. I've tried several recipes from it so far and every one is fantastic. In fact the two desserts I've tried are better than most in my omnivorous arsenal, plus I feel all righteous for eating desserts without tons of sugar and animal products :) This smoothie's also in there and I'm telling you, if you can get past the green color (hence no picture...not very pretty), you'll be making this every day for the rest of your life.
Freshly squeezed OJ (enough for easy blending, 1/2 - 1 cup?)
1 banana
1 ripe mango
1 ripe avocado
about 1-2 cups chopped green (kale, chard, spinach, etc)
as much ice as desired
Blend it all up and check off your serving of weird leafy greens for the day!
P.S. I had to bribe Liam with a quarter to try it but then he loved it!

Awesome! I'm going to try it tomorrow. I have a ton of chard and didn't know what I was going to do with it. I had Kale last week and ended up throwing it away because I never ended up using it with anything. This is perfect. Thanks for the great ideas. Keep them coming.
I just found your blog through myshore and I am glad I did, though I may not be when I gain tons of weight. :) Your dessert recipes look divine, especially the caramel, chocolate brownies. I think I drooled on my keyboard.
So can you taste the greens?
Nope. There's no way I'd be chugging something that actually TASTED healthy! It tastes like mango and banana.
I made this the other day and loved it. Rob and Caleb loved it too. I put it in a little cup for Caleb and he carried it with him for about 5 minutes. Yum Yum. I also made it with strawberries. :)
